We recommend you to read the Polylang documentation on how to use the Strings translations panel, before you start to translate WooCommerce strings and URLS.
If string translations are not listed for WooCommerce email notications in the Polylang string translation panel:
Goto WooCommerce>>Settings>>Emails>> select a notification such as Processing Order and enter the default text and save. This will create the string to translate in the Polylang String panel.
